
Welcome to my kitchen which has the aroma of freshly baked Sesame Seed Crackers. They were prepared with much care and are sugar free and low fat. These crackers are easy to make and are a nice addition to that soup or salad. If wheat gluten is a problem, another flour may be substituted. 1 1/2 cups spelt flour
1 cup sesame seeds (raw, other seeds or nuts may be used)
1/4 cup arrowroot
1/4 cup vegetable oil
1/4 cup low fat milk
2/3 teaspoon salt (optional)
1/2 teaspoon baking powder (non-aluminum)
1/2 cup water
Preheat oven to 400° F. . Mix first seven ingredients, then add water, a little at a time, to form soft dough consistency. On floured surface, using a rolling pin, roll to 1/8" thickness. Using a cookie cutter, cut into shapes and place on ungreased cookie sheet. With fork, prick each cracker and sprinkle with chili powder or Bake for about 12 minutes or until golden brown. Allow to cool before placing them in an airtight container. makes about 3 dozen crackers.
Spelt flour - Spelt is an ancient grain grown
mostly in Europe. If you have allergic reactions to the gluten in wheat flours,
spelt flour might be a good substitute, as it has less gluten content than wheat flour.

Arrowroot - A starch obtained from the rhizomes of a tropical American
perennial herb (Maranta arundinacea). It is used especially in cooking as a thickener.
(Arrowroot helps the consistency of the crackers. Also, when arrowroot is used in quick bread
and cake recipes, it works in combination with the spelt flour to achieve better rising action
from the baking powder.)
